Gallbladders

Just today I've heard several people talking about how they have had to change their eating habits after having their gallbladders removed.

I had to have my gallbladder removed 16 years ago. I eat anything I want with no restrictions and have never experienced any trouble. Not only that, I don't ever recall the doctor telling me to change my food consumption.

What am I missing?
